4 Ingredient Vegan Rawnola (gluten-free option)

This simple and tasty raw granola could not be easier to make! It’s fuss-free and ready to eat in 5 minutes or less.

I’ve been making this rawnola for over 6 years and as one of my fiancé’s favourite things that I make, I thought it was time to finally put pen to paper and share my recipe. It’s too good to keep to myself!

This rawnola is made with 4 simple whole foods ingredients that you might already have in your kitchen. There’s no baking required, all you need is a food processor and 5 minutes.

You can enjoy this rawnola as you would granola, served with plant-based milk or yogurt, fresh fruit, or on top of banana nice cream or a smoothie bowl. It’s perfect for meal prep and will keep for about 3 weeks in the refrigerator - although it usually only lasts a few days in our house because we can’t get enough of it!

For this recipe, I've used rolled oats, but you can also use quick-cooking oats. Oats are a versatile grain with many health properties. They are gluten-free by nature but are sometimes contaminated during processing or even in the field during production. If you are celiac or have gluten sensitivity be sure to select oats that are Certified Gluten-Free.

I’ve used Deglet dates for this rawnola as they are generally less expensive compared to other varieties and that is what we usually have on hand. I have also used Medjool dates in this recipe over the years which work nicely. You can really use any variety of dried dates that you have access to!

INGREDIENTS (makes 2.5 cups)

  • 1.5 cups rolled oats or quick oats*

  • 2 cups of dates (about 20 Deglet dates)**

  • 1/2 tsp Ceylon cinnamon

  • 1 tsp vanilla extract (1/4 tsp vanilla powder)

INSTRUCTIONS

  1. Add all ingredients to your food processor fitted with the chopping blade.

  2. Pulse until crumbles form. You may need to stop the processor and mix the ingredients with a spatula to help things along. This recipe is very forgiving and depending on how wet or dry the dates are you may have to adjust the ingredients. If the mixture is too wet add more oats as needed. If the mixture is too dry add a couple of extra dates.

  3. Store in an air-tight container in the refrigerator for up to 3 weeks.
