This simple to make Mango Salsa is the perfect summer appetizer and is a definite crowd pleaser!
This Mango Salsa from Stacey of Cured By Plants is incredible! It is fresh and flavourful, and completely guilt-free. Stacey shared her salsa with me earlier this month and it was so delicious. We paired her salsa with tortilla chips and homemade vegan enchiladas that Stacey made from the Oh She Glows Cookbook for my dad's vegan birthday party. This salsa would be perfect as an appetizer with raw crackers, and would also go nicely with tacos, on top of a salad or in a wrap with beans and veggies. To save time on food prep you can totally use pre-cut frozen mango - which also means you can make this all year round too!

Raw Vegan Mango Salsa
This mango salsa is MAJOR KEY. It's perfect for summer and is a definite crowd pleaser. It's also completely raw which makes it a great snack if your autoimmune disease is flaring or if you're having a rough day. A big part of my healing process involved me going mostly or totally raw when I wasn't feeling my best. It's also really important to always buy organic produce as conventional is not only lacking in nutrients, but it is also inflammatory due to the toxins in pesticides and GMO's.
1 + 1/4 cup mango, diced (about 1 large mango)
1/4 cup cilantro, chopped
The juice of 2 limes
1/2 cup bell pepper, diced
1/2 cup cherry tomatoes, chopped
1/2 cup red onion, diced
1 teaspoon Pink Himalayan Salt
1/4 jalapeño or hot sauce to taste (optional)
(use organic ingredients)
Mix all of the ingredients in a medium mixing bowl.
Serve chilled and store in an airtight container in the refrigerator.
