This is the ULTIMATE peanut sauce! It is simple to make in under 5 minutes and requires no cooking. I have to be honest, I’ve been pretty obsessed with it lately. This sauce has the perfect ratio of sweet and spicy, with loads of flavour from the fresh ginger and lime juice. It is perfect for dipping rice wraps or drizzling over steamed veggies. It also makes for a delicious topping for soba noodle bowls. It is incredibly versatile and loaded with flavour!
To make a soba noodle bowl, like the one in the photo above, check out my Vegan Soba Noodle Bowl recipe which is gluten-free with an oil-free option.
coconut sauce (soy sauce alternative)
The coconut sauce that I am referring to in the ingredients listed below is a savoury soy-free, vegan, gluten-free sauce that is made from coconut sap. It is often called “coconut seasoning sauce” or “coconut aminos” and is an alternative to soy sauce that I highly recommend. Coconut sap is very low glycemic (GI of only 35), is an abundant source of minerals, vitamin C, amino acids, broad-spectrum B vitamins and has a nearly neutral pH level. It has a similar flavour to soy sauce and can be subbed in place of soy-sauce in marinades, stir-fry, dressings and can be served with sushi.*
Please note: Soy sauce can be used in this recipe instead of coconut sauce if you do not have a sensitivity to soy.
The ULTIMATE Peanut Sauce
1/4 cup smooth peanut butter
1 tablespoon lime juice
1 + 1/2 tablespoons maple syrup
1 teaspoon hot sauce (I used a natural Sriracha sauce)
1/2 teaspoon fresh ginger, finely grated
1 tablespoon coconut seasoning sauce or soy sauce
1/4 cup filtered water
(use organic ingredients)
1. Combine all ingredients except for the water in a small mixing bowl.
2. Add 1/4 cup filtered water and mix. Add more water if needed until the sauce is the desired consistency.
Best served at room temperature.
To store: refrigerate in an air-tight glass jar or container.
P.S. You may want to double the recipe because if you love it as much as I do, it won’t last long!
