My good friend Liz Gallagher of Unbaked Cake Co. is a Toronto-based vegan and talented raw food chef who makes the most delicious and equally gorgeous raw vegan treats. In her spare time, Liz whips up incredible savoury dishes, some of which she has shared with me, like her vegan Kale Caesar Salad with homemade dressing, crunchy chickpeas and garlicky cauliflower and her Avocado Chimi, which she makes often for vegan-foodie parties. Liz has generously shared her recipe for her Chimi - it is so good that I just had to feature her recipe here on my blog! The name of the dish "chimi" comes from "chimichurri" - an Argentinian sauce traditionally served on grilled meat. Liz has swapped diced avocado in this vegan variation to make a flavour packed dip! This dip would also be superb as a salad topping, filling for a wrap or sandwich.

Raw Vegan Avocado Chimi
2 to 3 ripe but firm avocados, diced
1/4 cup parsley, finely chopped
1/4 cup cilantro, finely chopped
2-3 cloves of garlic, minced
1/2 tsp crushed red pepper flakes
1/2 tsp dried oregano
1 tsp salt
1/4 tsp pepper
2 tbsp red wine vinegar
2 tbsp lemon juice
4 tbsp extra virgin olive oil
(use organic ingredients)
Combine dressing ingredients together and then gently mix in the diced avo! Serve with crackers or sliced (toasted) baguette!
Note: use raw and unpasteurized vinegar if you’d like to make this recipe completely raw.
