No-Bake Chocolate Caramel Pecan "Treatzza Pizza" from Sweet Hart Kitchen

I am thrilled to be sharing this decadent no-bake recipe for a Chocolate Caramel Pecan "Treatzza Pizza" from my lovely friend Alexandra Courts of Sweet Hart Kitchen. This recipe share is just in time for the holidays! Impress your coworkers at your office holiday potluck, or liven up the dessert table at your next festive dinner with this easy-to-make dessert pizza which is topped with chocolate, caramel and pecans, yum!

Early on in my vegan journey, I first stumbled across Alex via Vegan Girlfriend - a source of plant-based recipes and incredible food photography on vegangirlfriend.com. I was instantly hooked and it quickly became a source of inspiration for me even before I started blogging myself! 

Sweet Heart Kitchen began as a reoccurring daydream for Alex and she has truly made her dream a reality. It has been so wonderful to watch this local vegan company grow such a strong following in a short amount of time. Not only are all of Alex's treats delicious, but they are super Instagramable too - if you're not following @SweetHartKitchen on Instagram you're definitely missing out on some quality vegan food porn! The concept behind SHK is simple: vegan, gluten-free, raw and no-bake treats, that are naturally sweetened and made with simple ingredients that are organic (whenever possible), and crafted with love. My current SHK obsessions are the lemon raspberry cake cups and "Snickers" Bites - a layer of peanut butter nougat, date caramel sauce, and peanuts, all coated in dairy-free chocolate. Everything that Alex makes is so, so good!


Chocolate Caramel Pecan "Treatzza Pizza" 

Ingredients

the crust

1 cup raw pecans

1/2 cup shredded unsweetened coconut

1/2 cup raw cacao powder 

pinch of pink Himalayan salt 

2 cups dates

the filling

2 cups raw cashews

1 can premium/full fat canned coconut milk

3/4 cup maple syrup

1/2 cup pitted dates

2 tbsp coconut oil

1 tsp non-alcoholic vanilla extract

pinch of pink Himalayan salt

the toppings

raw pecans 

caramel drizzle:

1 cup pitted dates (soaked)

1/2 cup coconut oil

1/2 cup water (more or less depending on preferred consistency)

1/2 to 1 tsp pink Himalayan salt

1 tsp non-alcoholic vanilla extract

chocolate drizzle:

1/4 cup coconut oil (melted) 

2 tbsp maple syrup

3 to 4 tbsp raw cacao powder (depending on preferred flavour) 

Directions

Blend all the crust ingredients in a food processor, excluding the dates, until finely ground. Add in the dates and blend until the crust mixture is fully combined and malleable. 

Line the bottom of an 8" springform cake pan with parchment paper. 

Press the crust mixture evenly into the bottom of the pan and along the sides (kind of like a deep dish pizza) so that it can contain the cake mixture. 

For the cake mixture, blend all of the ingredients together in a food processor until smooth. If the mixture is too thick, add in some water and blend once more. 

Pour the cake mixture into the pan and fill it until the mixture is levelled with the height of the crust (be sure to not over pour).

Allow cake to freeze for at least 1 hour before adding the toppings.

For the caramel drizzle, blend all of the ingredients together in a food processor until smooth. 

For the chocolate drizzle, heat the coconut oil until it liquifies and mix in the remaining ingredients until smooth.

Top your "treatzza pizza" with the caramel/chocolate drizzle as well as the raw pecans.

Allow the cake to freeze for at least one more hour.

Serve up and enjoy!
